Best Salsa Recipe




I don't know about you but I absolutely love salsa, whether it is a topper on a salad or a burrito bowl or it is on its own with chips, it is one of my favourite foods!


This recipe tastes so good, and is very similar in taste to Lone Star (I have not been there in years but back in the day, they used to have the best salsa and we can call this the homemade version for sure!) This is simple, takes a short time to do (we are honest here about timing because I always take longer than how long recipes say it will take)


The cutting of ingredients took the longest, especially because my hands were getting weak and shaking but this took me 45 minutes to make however, if you a quick chopper, this will take you less time. This has no cook time and you can eat before putting in the fridge.


When it goes into the fridge, it will thicken and it will get a little spicier. When you take it out to eat, just give it a stir as the liquid might have come to the top a little (this is normal, just stir and trust the process).



Recipe:

Prep time: 30 minutes (just prepping the ingredients)

Ingredients:

  • 1 28 oz can (or bottle) of strained tomatoes

  • 2 Cups roma tomatoes (6-7 Roma Tomatoes)

  • 1 Green pepper

  • 1 Chopped white onion

  • 1 Jalepeno (with seeds = medium) (without=mild)

  • 4-6 garlic cloves (up to 6 if they are small)

  • Salt to taste

  • 1 Cup Loosely packed cilantro ( washed without stems - pulled off stems)

  • 1 Small tin tomato paste

  • 1 Tbsp Olive Oil

  • 1 1/2 tsp Salt to taste (2-2 ½ tsp)


Directions

  1. Blend all in food processor.

  2. Store in large bowl in the fridge


Keeps for 5-7 days in the fridge but I'd be surprise if it isn't eaten before then because it is so good!!
